savory bean spread

Cannellini Herb Spread

This creates a smooth spread which would be great for dipping crackers, chips, vegetables and more. Would also taste wonderful as a sandwich spread.
Ingredients:
  • 1 cup dry Cannellini Beans 
  • 1/4 cup Olive Oil 
  • 2 Tb Lemon Juice 
  • 1 clove Garlic, minced 
  • 1 tsp Thyme 
  • 1 tsp Rosemary 
  • 1/2 tsp Sea Salt 
  • 1/2 tsp Black Pepper 
Directions:
Soak the beans overnight. Drain and rinse the beans and put into a medium-sized saucepan. Add 4 cups of water and bring to a boil. Reduce heat and simmer for about 1 hour. Drain and rinse beans with cold water. Add all ingredients to a food processor or blender. Blend until smooth. Makes 20 - 2 Tablespoon servings.
